Once the optimum point of maturation of the fruit arrives, we proceed to the harvest and vinification with selected grapes, collected by hand and transported to the cellar in individual boxes.

The vinification is carried out independently for each variety, in stainless steel tanks and at controlled temperature between 24 and 27 ºC for the vinification of ink and of 16ªC for the vinification of the dry Moscatel target. Once the fermentations have concluded, the wine is passed to the cellar for aging in French and American oak barrels of 225 and 300 liters where they are stored in wood for 12 or 18 months depending on the destination of the wine; Breeding or Reserve. After the time of aging in wood is bottled and the bottles are stored in cages until the wine reaches an appropriate degree to enjoy it.
